Description: New York strip steak is a cut of beef which is known by a variety of other names, including Delmonico steak, Kansas city steak, top loin steak, hotel cut steak, and ambassador steak. This cut of meat is particularly prized for its flavor and tenderness. It is a common offering on restaurant menus. Many people like this cut of meat rare, showcasing the delicate flavor and naturally tender texture. A 4 oz. portion of Piedmontese New York Strip steak packs 26 grams of protein at only 180 calories and only 10 grams of fat! Other breeds show statistics about twice the amount of calories and fat. The Piedmontese cattle is a breed of domestic cattle that originated in the Alpine regions of Piedmont, in north-west Italy. These cattle carry a unique gene identified as an inactive myostatin allele that causes hypertrophic muscle growth, or double muscling. This attribute provides a higher lean-to-fat ratio as well as less marbling. In turn, it produces very quality beef. Piedmontese beef is nutrient rich, low in fat, calories, and cholesterol. Beef is a valuable source of dietary iron, zinc, and protein. Being lower in fat means being lower in calories. Here at Azure Farm, our Piedmontese cattle are raised on our certified organic range pastures of both Moro and Dufur, Oregon. Both areas are blessed with clean, fresh air and good water sources for the cattle. The cattle are moved frequently during the summer months to provide them with optimum grazing. They are not fed any grain. Each week, the cattle have free access to certified organic fruit and vegetable pulp (mainly carrot, celery, and apple) that we haul in from Columbia Gorge Organic Fruit Co., an organic orchard and juice company out of Hood River, Oregon. This gives the cattle many extra vitamins and minerals. The cattle sure enjoy it! They come running when they hear the sound of the truck arriving with another fresh load of pulp! In the winter months, the cattle are fed a combination of our certified organic alfalfa and triticale (which is cut while in the grass stage before the grain is formed) hay that is grown on the farm, along with the pulp and any grass that might be available in their pasture. Every so often, they are supplemented with Redmond mineral salt. This diet really produces a healthy-looking, beautiful animal and wonderful, quality beef! Azure Farm is located in the foothills east of Mt. Hood with a fantastic view of the Cascades and farm land in the valleys below. We've been growing organically for over 25 years, and are attempting to go beyond basic organic (this ensures harmful things have not been used). We try to keep up with organic soil amendments that will actually improve our soil, and consequently improve the food itself. Why buy organic beef Organic cattle are raised without the use of antibiotics or hormones, plus they need to be pastured on organic land and fed organic hay without the use of any chemicals, herbicides, or insecticides. The hay cannot be genetically-modified. Grass-fed animals that are not certified organic can be fed genetically-modified (GMO) hay, and their pastures can be sprayed with harmful chemicals.
