A proprietary microbial coagulant derived from the fungi Rhizomucor miehei (also known as Mucor miehei) is used. This species of fungus is commercially used to produce enzymes that effectively curds milk for cheese production. This enzyme is fully approved for organic cheese production and ensures our Sierra Nevada Cheese remain vegetarian-friendly. This microbial coagulant is not from a GMO source and does not encounter any GMOs during production.
