High in protein and fiber. In 2001, at the age of 7, Luke Courneya was diagnosed with Celiac disease. According to Luke’s mother, at that time, they couldn’t find any gluten-free foods that he liked, so she was making things at home from scratch. She just wanted a safe snack that Luke would eat. Luke’s uncle, Jaap Langenberg, was inspired by his nephew’s dietary restrictions and set out to develop gluten-free chips and crackers that “don’t taste like tree bark.” Luke’s Organic chips and crackers are exceptionally tasty, by any standards, with just the right touch of salt and a satisfying crunch. These days, Luke has a hard time deciding which flavor bearing his name is his favorite. He’s particularly fond of their new “Cheddar Clouds,” which they named after Luke’s love of clouds and meteorology. (Part of the company’s proceeds go to the Red Cross for severe weather disaster relief.)
