All Rumiano Cheeses are made using a vegetable based microbial coagulant instead of animal rennet making it approved for the vegetarian lifestyle safe. Note: This item is a random weight item, prices vary. The price on your invoice may be higher.  What is a random weight item  Random weights are calculated by the base weight of this product. If this product is 1-2 pounds, the base weight is 1 pound. The price displayed here would be for a 1 lb item only. The displayed price, divided by the base weight, is the price per pound. Since random weight item prices vary, and will vary for each customer, we are not able to display all prices. In this example, if you receive a 2 pound product, the price on your invoice will be higher. We use a proprietary Microbial Coagulant. This is a Microbial Coagulant from the fungi Rhizomucor miehei (aka Mucor miehei) and is a species of fungus commercially used to produce enzymes that can be used to curd the milk to produce cheese. We do not use Chymosin (or Chymax) as it is NOT allowed in Organic and is on the National Organic Program prohibited substance list as being GMO. The milk used to create Rumiano Cheese, Butter, Ghee and Whey Protein Concentrate-80% is sourced from 19 certified, organic family dairies within an 85-mile radius of our production facility in Crescent City, CA. No vaccines are allowed to be used with any cows that are being milked. If a cow receives a vaccine, that cow is taken out of the milking line.
