Description: This organic version is a pale yellow semi-hard cheese, with a creamy texture and a mild flavor. Rumiano’s organic Monterey Jack color is a direct result from the high butterfat organic Jersey cow’s milk that it is made from. Rich Jersey cow’s milk also gives it a creamy buttery texture and mild flavor. We use a proprietary Microbial Coagulant. This is a Microbial Coagulant from the fungi Rhizomucor miehei (aka Mucor miehei) and is a species of fungus commercially used to produce enzymes that can be used to curd the milk to produce cheese. We do not use Chymosin (or Chymax) as it is NOT allowed in Organic and is on the National Organic Program prohibited substance list as being GMO. The milk used to create Rumiano Cheese, Butter, Ghee and Whey Protein Concentrate-80% is sourced from 19 certified, organic family dairies within an 85-mile radius of our production facility in Crescent City, CA. No vaccines are allowed to be used with any cows that are being milked. If a cow receives a vaccine, that cow is taken out of the milking line.
