Description: Our Rumiano Organic Monterey Jack is a semi-hard cheese that is white in color and has a mild, buttery flavor with a subtle tang. It is smooth and creamy in texture and has a slightly elastic consistency. This cheese is versatile and can be used in many dishes, from sandwiches and burgers to tacos and salads. It is also a popular cheese for melting due to its smooth and creamy texture. Monterey Jack cheese pairs well with other mild cheeses, as well as fruits and vegetables, and is often used in Mexican and American cuisine. We use a proprietary Microbial Coagulant. This is a Microbial Coagulant from the fungi Rhizomucor miehei (aka Mucor miehei) and is a species of fungus commercially used to produce enzymes that can be used to curd the milk to produce cheese. We do not use Chymosin (or Chymax) as it is NOT allowed in Organic and is on the National Organic Program prohibited substance list as being GMO. The milk used to create Rumiano Cheese, Butter, Ghee and Whey Protein Concentrate-80% is sourced from 19 certified, organic family dairies within an 85-mile radius of our production facility in Crescent City, CA. No vaccines are allowed to be used with any cows that are being milked. If a cow receives a vaccine, that cow is taken out of the milking line.
