The rich, creamy base comes from small family farms where cows roam on 1-8 acres of diverse grasslands, producing milk that’s as nutrient dense as it is flavorful. Add in organic spices and a melty trifecta of three cheeses, and you’ll find a dip that’s unapologetically indulgent and proudly clean. USDA Organic 5g Protein California Milk We use a proprietary Microbial Coagulant. This is a Microbial Coagulant from the fungi Rhizomucor miehei (aka Mucor miehei) and is a species of fungus commercially used to produce enzymes that can be used to curd the milk to produce cheese. We do not use Chymosin (or Chymax) as it is NOT allowed in Organic and is on the National Organic Program prohibited substance list as being GMO. The milk used to create Rumiano Cheese, Butter, Ghee and Whey Protein Concentrate-80% is sourced from 19 certified, organic family dairies within an 85-mile radius of our production facility in Crescent City, CA. No vaccines are allowed to be used with any cows that are being milked. If a cow receives a vaccine, that cow is taken out of the milking line.
