Description: Even though it is low-fat, there can still be a cream top on this yogurt because, like all our yogurts, it is not homogenized. So, give it a good stir! We vat pasteurize using a “low and slow” heating method to harness all of the wholesome goodness in grass-fed cow’s milk. Our cool, coastal climate provides green grass 365 days a year – a constant source of nourishment for our unique blend of crossbred cows and our milk. Our low temperature/vat pasteurization means that our milk is held at a minimum of 145 Degrees F. for 30 minutes and then quickly cooled. This retains a high flavor profile for the milk while maintaining a minor percentage of the milk’s natural enzymes and beneficial bacteria providing their own health benefits of our milk. This means that our milk has more life in it, so the shelf life of our milk is shorter than most. The certified regenerative grass pastures that our cows graze on are more nutrient dense – translating into dairy that has comparatively more nutrients, especially omega-3 fatty acids, which play several important roles in the body. They are an essential building block of the brain, eyes, and cell membranes (a cells’ outer wall), and have been shown to help prevent a number of chronic diseases, including heart disease and stroke.
